- ¼ cup buckwheat flour
- 1 cup cake flour
- ½ teaspoon baking powder
- 200ml milk
- 1 egg
- 2 tbsp melted butter
- 250ml cream cheese
- 2 tbsp finely chopped chives
- Salt and freshly ground black pepper
- 250g smoked salmon ribbons
- 3 tbsp black caviar
- Fresh dill sprigs to garnish
- Lemon wedges to serve

Method

1Combine both flours, baking powder and salt in a bowl. In a separate bowl, whisk together the milk, egg and butter, and then whisk into the flour mixture. Heat a nonstick pan over a medium heat and fry tablespoonfuls of batter for about 2 minutes until bubbles form on the top side of the blini. Flip and cook for a further minute or until golden brown. Repeat with the remaining batter. Set aside.

2Beat together the cream cheese and chives, and season with salt and pepper.

3To serve, top each blini with the chive cream cheese and a piece of smoked salmon. Finish with a small dollop of caviar and a sprig of dill, and serve with lemon wedges.
