- 500ml flour
 - 15ml baking powder
 - 2ml salt
 - 175ml brown sugar
 - 250ml fruit mince
 - 2ml finely grated orange zest
 - 1 large egg
 - 250ml milk
 - 60ml vegetable oil
 - 5ml vanilla essence

Method

                                1Preheat the oven to 200°C and line your Le Creuset Muffin Tin with paper or foil liners.

                                2Sift the flour, baking powder and salt into a large bowl.
 - 
                                3Stir in the brown sugar, fruit mince and orange zest.
 - 
                                4Whisk together the egg, milk, oil and vanilla essence in a separate bowl.
 - 
                                5Make a well in the centre of the flour mixture and add the liquid all at once. Use a spoon to lightly stir everything together. Do not overmix, the batter should still be lumpy.
 - 
                                6Divide the mixture evenly between the 12 muffin cups. Bake for 20-25 minutes or until a toothpick inserted into the centre of a muffin comes out clean.

                                7Best served fresh from the oven with lashings of butter.
