- 225g dried figs, chopped
- 1 tablespoon balsamic vinegar
- 90ml hot water
- 650g plain flour
- ¾ teaspoon bicarbonate soda
- 1 ½ teaspoons baking powder
- 1 ½ tablespoons salt
- 1/3 teaspoon freshly ground black pepper
- 1 extra large egg, beaten
- 400ml soda water
- 3 tablespoons honey
- 80g melted butter, divided
- 1 tablespoon chopped fresh sage
- Additional butter for greasing and serving

Method

1Preheat oven to 180°C/160°C fan forced. Grease a 28cm Heritage Oval dish.

2In a medium bowl, toss figs with balsamic vinegar. Cover with hot water and let stand at least 10 minutes. Drain.

3In a large bowl, whisk together dry ingredients. Add the egg, soda water, honey and 5 tablespoons melted butter. Mix until just combined. Stir in the soaked figs and chopped sage.

4Tip the batter into the dish and bake 25 minutes. Rotate the dish and brush the bread with the remaining melted butter. Bake an additional 20 -25 minutes, or until a toothpick inserted in the centre comes out clean. Let cool slightly on a rack before serving.
