Ingredients
- 350g basmati rice, rinsed
- 375ml vegetable stock
- 1⁄2 tsp turmeric
- 70g butter, melted
- Toasted almond flakes
- 20g coriander for serving
- Lime wedges for serving
- 50g golden sultana raisins for serving
- Sliced spring onion for serving

Method

1Place the washed rice and stock into your Le Creuset Pokémon 18cm Cocotte Every and place over medium heat with the lid on. Cook for 10-15 minutes, stirring often. Once cooked, turn off the heat and allow the rice to steam in the pot with the lid on for 5-8 minutes.

2Place the butter in a 3-ply Stainless Steel 24cm Deep Casserole. Melt and allow to slightly brown. It will have a slightly nutty fragrance when ready. Remove the butter from the heat and add the turmeric. While the butter is warm, add to the cooked rice and stir through. Season with salt and black pepper.

3Serve the rice sprinkled with toasted flaked almonds, golden sultanas, fresh coriander, spring onions and fresh lime juice.

4Serving suggestion: Fried mince and caramelised onions would be a great addition to make this side dish a whole meal. Simply caramelise 1 large sliced onion and add 500g ground beef mince. Cook until golden and season with salt and black pepper. Serve with the fragrant turmeric rice.
